Inspired by my 6 am spin class, I created a delicious muffin that satisfied my hungry craving for something a little different and exciting. Here is my latest healthy recipe offering from the Guru Kitchen:
Spin Class Muffins
Recipe:
2 eggs
2 heaping tbsp of apple butter
1 cup ground walnuts
½ cup sesame butter
½ cup almond butter
2 tbsp real vanilla extract
2 tbsp ground cinnamon
½ cup almond milk
¼ cup real oatmeal flakes
5 packets stevia
1 cup fresh blueberries
1 tsp baking soda
Preheat oven to 350 degrees.
Mix all ingredients till you get a sticky paste.
Pour into muffin tins and bake for 16 minutes.
Enjoy with a nice cup of herbal tea.
