Faith Canada will be offering non-traditional multi- faith services starting February 5, 2012. Services will be held every first and third Sunday at Trinity Church, 427 Bloor Street West at Spadina from 6:00 pm to 7:30 pm.
These services will include participation by the congregation and provide a forum for meaningful spiritual connection in a supportive setting.
We promote tolerance and understanding and also welcome all sexual orientations.
We will begin with a series of circles – for healing, for nature, for peace, and to honour those who have passed to the other side. Services will
draw from a wide variety of ancient and modern spiritual scriptures and involve the congregation.
Each month we will feature a “Spiritual Leader of the Month” who will facilitate our understanding of the practice of spiritual living, with the
aim to improve our lives and contribute a positive influence in the world. Each presentation will be followed by a group discussion.
As well, every event will feature a “Children of the World” activity, designed to introduce children to world religions, ancient religions and

new age spiritual principles in an age-appropriate format.

During this season of so much indulgence, why not mix it up a bit with some healthy h’ors d’ouevres. Flavour and tastiness are not sacrificed in this selection of appetizer recipes, even though the calorie and fat count is much lower than the typical offerings at a cocktail party. Your friends may not thank you for considering their health and well being but with these offerings, you’ll have the satisfaction of gift giving anyway.
Guacamole, or any of the tofu dips are wonderful snacks or appetizers on a rice cake or with a potato bun or other yeast free bread. Other appetizers, like the artichoke hearts with whipped tofu dill filling, cucumber arcs with celery cream tofu filling, miniature tofu broccoli quiche, mini potatoes with garlic cream tofu filling are fancy appetizers, perfect to serve at your Christmas Open House or to take along to a friend’s. party.
ARTICHOKE HEARTS WITH WHIPPED TOFU DILL FILLING
Serves: 6 Prep. Time: 10-15 mins, Cook Time: 40-50 mins
Ingredients:
6 artichokes hearts
STUFFING
16 oz firm tofu
¼ cup celery, finely chopped
1 or 2 garlic cloves, pressed
1 bunch of dill, chopped
½ tsp of dry mustard
2 heaping Tbsp Tofu mayonnaise
Juice from 1 lemon
Cucumber, paprika and parsley for garnish
Artichokes are one of the leading liver cleansers and its helps to drink the biter water from steaming the artichokes.
The liver benefits from being cleansed with bitter foods such as artichoke, dandelion and rapini.
Instructions:
ARTICHOKES - Steam the artichokes until done. This may take up to 40 to 45 minutes depending on their size. Remove all the leaves (these may be eaten at another time with the dip). Using a sharp knife cut out the needles in the middle of the artichoke hearts. Cut the stem off to allow the artichoke heart to stand on a platter. Decorate a large flat platter with a bed of lettuce and arrange the artichoke hearts on it.
TOFU WHIPPED STUFFING - Whip the Tofu in a food processor until creamy. Add all the remaining ingredients and blend well. Spoon a little stuffing into each artichoke heart. Garnish with a twist of cucumber, paprika or a sprig of parsley.
CUCUMBER ARCS WITH CELERY CREAM TOFU FILLING
Serves: 6 10-12 pieces, Prep. Time: 15-20 mins
Ingredients:
3 cucumbers
3 Tbsp health mayonnaise
8 oz firm tofu
1 tsp lemon juice
½ cup celery finely chopped
3 scallions finely chopped
1 tsp Herbamare
paprika for garnish
Instructions:
Cut the cucumbers in half and then into 1½” pieces and spoon out the middles with a melon spoon or tiny spoon, making sure not to make a hole in the bottom.
Mix the mayonnaise, tofu, lemon juice, celery, scallions, and Herbamare in a food processor. Spoon the mixture into the cucumber arcs, and sprinkle with paprika.
Arrange on a nice platter decorated with a bed of lettuce, red cabbage, fresh flowers or sprigs of fresh herbs.
Presentation Tip: Parsley sprigs make a bright seasonal garnish for your platters, but parsley can also be incorporated into many dishes to take advantage of its many healthy properties. To make a refreshing and cleansing parsley tea: boil 3 teaspoons of fresh parsley or 1 teaspoon dry parsley in two cups of water. Simmer at a low heat for 20 minutes until fully steeped.
GUACAMOLE
Serves: 4-6 Prep. Time: 10-15 mins
Ingredients:
2 ripe avocado pitted, peeled and chopped
½ cup red onion, chopped
2 garlic cloves, pressed
¼ cup olive oil
2 Tbsp lime juice
Dash of sea salt
¼ cup fresh chopped cilantro (optional)
Dash of cayenne pepper (optional for a spicier dip)
Instructions:
Mash the avocado with a potato masher to achieve a greater consistency than putting them in the blender. Add the remaining ingredients and mix thoroughly. Serve with rice crackers or rice cakes, or alongside fresh rice and refried beans.
MARINATED VEGETABLES ON MINI SKEWERS
Serves: 4-6 , Prep. Time: 15-20 mins, Cook Time: 10-12 mins
Ingredients:
MARINADE
½ cup onion, finely chopped
2 garlic cloves, minced
1 tsp each thyme, marjoram and basil
1 tsp dry mustard
2 bay leaves
½ cup olive oil
¼ cup fresh lime juice
VEGETABLES
1 cup 1″ squares of butternut squash
½ cup of 1″ pieces of onion
1 cup of 1″ pieces of zucchini
1 cup of 1″ pieces of carrot
1 cup of 1″ pieces of cauliflower
1 cup of 1″ pieces of broccoli
Instructions: Mix the marinade ingredients well. Make up interesting colour combinations of the vegetables on mini toothpick skewers and marinade them for at least eight hours or overnight. Roast on a hot BBQ grill or in the oven at 350°F for 10 to 12 minutes. Serve at once.
REFRIED BEANS
Serves: 8-10 Prep. Time: 15-20 min. Cook Time: 15-20 min.
Ingredients:
2 cups pinto or black beans, pre-cooked
¼ cup onion, chopped
3 garlic cloves, chopped
3 Tbsp olive oil
dash of sea salt
dash of cayenne pepper as desired
1 Tbsp tofu parmesan cheese for garnish
Instructions: Heat the oil in a skillet and sauté the onion and garlic until golden. Add the beans, sea salt and cayenne pepper and mash the mixture with a metal potato masher until a smooth consistency is achieved. Continue cooking until all the water from the beans has evaporated and a dry consistency is reached. Serve on a platter surrounded by rice crackers and dusted with the tofu parmesan cheese.
MINIATURE TOFU BROCCOLI QUICHE
Serves: 8-10 Quiches
Quiche Ingredients:
1 Tbsp Olive Oil
1 garlic clove, pressed
1 onion, chopped
1 cup broccoli, cooked and chopped
1 tsp each of dill and basil
16 oz firm Tofu (squeeze out excess liquid)
1 egg or equivalent egg replacer
1 cup Soy milk
Instructions: Heat the oil and sauté the garlic and onion until the onions are translucent. Add the broccoli, dill, and basil. Turn off the heat and set aside. Mash the tofu with the egg, Soy milk, wheat free Tamari and dry mustard. Add the broccoli mixture to the Tofu and stir well. Pour into the mini quiche pastry shells and bake for 45 minutes at 375°F or until a knife inserted into the quiche comes out cleanly.
Mini Quiche Pastry Shells Ingredients:
1 ½ cups oat or spelt flour
½ cup rolled oats
1/8 tsp sea salt
¼ cup olive oil
¼ to ½ cup apple juice
1 tsp Wheat Free Tamari
2 tsp dry mustard
Instructions: Preheat the oven to 375°F. Combine the flour, oats, salt and oil in a large bowl. Stir with a fork, and slowly add the apple juice while kneading to form a wet ball. Roll the dough out on a piece of wax paper and cut out a 3” circle (e.g. use the top of a glass). Prepare a small cupcake pan lined with wax paper, trimming off any excess wax paper. Press the dough into each cup of the prepared pan. Decorate the edge by fluting with a fork or by pinching the dough between the thumb and two fingers. Prick the bottom of the crust with a fork. Bake at 375°F for 5 to 7 minutes.
MINI POTATOES WITH GARLIC CREAM TOFU FILLING
Serves: 8 -12 40 pieces Prep. Time: 20-25 mins Cook Time: 20-30 mins
Ingredients:
20 2″-3″ small new red potatoes
16 oz firm Tofu
¼ cup celery, finely chopped
5 garlic cloves, pressed
2 Tbsp health mayonnaise
1 Tbsp lemon juice
Dash of sea salt
Lettuce leaves, parsley, flowers and/or fresh herbs for garnish
Instructions: Cook the potatoes in boiling water for 20 to 30 minutes or until done. Let cool and proceed to cut in half. Scoop out the middle with a small spoon or a round spoon designed to make melon balls. Cut the bottom of the potato in such a way that it will stand on its own.
FILLING - Mix the tofu, celery, garlic, mayonnaise, lemon juice and sea salt in a food processor or blender until smooth. Fill the mini potatoes with the filling until it comes to a mound. Top each one with a small sprig of parsley. Arrange the potatoes on a tray of red and green lettuce leaves, and decorate with flowers or sprigs of fresh herbs.
MINI ZUCCHINI BOATS WITH SWEET PIMENTO TOFU FILLING
Serves: 4 10-12 pieces Prep. Time: 15-20 mins Cook Time: 10-12 mins
Ingredients:
3 zucchini
3 pimiento (sweet red peppers)
2 garlic cloves finely minced
½ cup Spanish onion, chopped
1 Tbsp olive oil
16 oz firm Tofu
Paprika and parsley for garnish
Instructions: In a large pot steam the zucchini for 7 to 8 minutes. Cut the zucchini in half and then into 2″ pieces and spoon out the middles with a melon spoon or tiny spoon, making sure not to make a hole in the bottom. Sauté the red peppers, garlic, and Spanish onion in hot oil. Stir until the peppers are soft and slightly browned. Puree this sweet pimiento mixture with the two blocks of tofu in a blender or food processor. Fill the zucchini mini boats with the Sweet red pepper filling. Garnish with paprika and a sprig of parsley.

People often tell me they don’t know what to eat, especially when convenience and junk foods are so readily available everywhere they go. How we eat is fast paced and on the run. Confusion and lack of time are popular defenses for our poor food choices and eating habits. However, a willingness to learn and making wellness a priority are more critical factors. You would educate yourself for any job, hobby, or sport that you were interested in pursuing. What is more important than educating yourself on how to eat for wellness? Making healthier food choices becomes easier when you ask yourself these questions:
Is it natural: fresh, live, whole food? Or is it refined and man-made containing unnecessary sugar, bad fats, chemicals, hormones, antibiotics, MSG, colouring, preservatives and other undesirable additives?
Below are three tried and true recipes using natural, easy to find ingredients that will help you on your healing journey through life.
Serves: 6-8, Prep. Time: 15-20 mins / Cook Time: 1 hour
Ingredients:
1 large butternut squash, peeled and chopped
3 sticks of cinnamon
12 cups water
¼ tsp nutmeg
1-2 apples, peeled and chopped (optional)
Instructions: Boil the butternut squash in the water with the cinnamon sticks for 30-45 minutes.
Puree the squash with a little of the water (reserving the remaining water).
Put the pureed squash back in the pot, and add extra water as needed to produce the soup consistency of your choice.
Add the nutmeg and simmer for another 10-15 minutes. For a sweeter soup add 1 or two small apples at the beginning.
Serves: 4, Prep. Time: 15 mins / Cook Time: 1 hr
Ingredients:
2 boneless chicken breasts cut into pieces
2 potatoes, chopped
1 sweet potato, chopped
2 onions, chopped
1 cup broccoli, chopped
1 cup water
1 tsp Herbamere
Dash of Sea Salt
Instructions: Place all the ingredients in a casserole, cover and cook at 350ºF for 1 hour. Serve with steamed brown rice or millet.
Serves: 4
Eating apples with your meal is like taking a digestive enzyme as the pectin in the apple helps break down your food.
Ingredients:
1 2/3 cups Oat flour (you may substitute Rice or Millet flour)
1 tsp arrowroot baking powder
1/3 cup Olive oil
1 cup apple juice
¾ cup + 3 Tbsp Rice milk
2 eggs, or 2 Tbsp flax powder and 2 Tbsp water, or egg replacer (optional)
Instructions:
Mix all of the above ingredients in a blender. Heat a skillet to a medium to high temperature. Test that the pan is ready by putting a drop of cool water on the skillet. If the water beads then the pan is hot enough.
For each crepe, pour a third to half cup of batter onto the hot skillet. Cook until you see bubbles begin to appear on the surface (3- 5 min.) and then flip them over. This recipe will make approximately 16 medium crepes.
Set the crepes aside and keep them warm in a covered dish in the oven.
APPLE AND CINNAMON FILLING
Prep. Time: 10-12 mins / Cook Time: 15-20 mins
Ingredients:
½ cup ghee ( ¼ cup olive oil for the non dairy vegetarians)
½ cup brown rice syrup
2 cups finely chopped apples
3 Tbsp cinnamon
¼ cup chopped almonds
Instructions:
Heat the oil or ghee and add the brown rice syrup. Stir until the syrup softens. Add the apples, cinnamon and chopped almonds. Cook for about 15 minutes on a medium heat or until the apples are softened.
To ASSEMBLE THE APPLE CINNAMON CREPES - Take a crepe and pour the desired amount of filling to still be able to roll the crepe or fold it in half. Place three crepes on a plate which has been dusted with cinnamon all around the edges. Serve as is or with additional maple syrup on top, or a little plain yogurt.
Good Ideas! Serve as a breakfast item brunch, dessert or use the crepes as a bread to eat with meals with yogurt or tahini spread.

When the numbness wears off you may find yourself feeling explosive
with emotions. Think of the feeling in your mouth after the dentist’s
freezing has worn off – you’ll go through various stages of discomfort
before your mouth is back to normal.
As we move from numbness to yearning it’s possible that the
slightest incident – while watching TV or reading the newspaper – can
trigger tears and sadness, anxiety and confusion. It may feel like being hit
by an emotional avalanche. It doesn’t help that sleep disturbances often
occur at this stage, as can physical ailments.
The season of numbness and the season of yearning can be times of
avoidance. The full impact of reality may not have sunk in after months or
even years. To complicate things further, others might make it known that
they feel you should be moving on with your life.
The challenge of the season of confrontation is to begin to accept
the reality of your loss and experience the pain of that realization. This
stage can be the most difficult and painful. Reality has set in and grief
and anger may now be accompanied by guilt, loneliness, and depression.

Journaling is recognized for its therapeutic ability to process
grief and all types of stress. Journaling engages the creative side of the
brain, which is linked to emotions and helps to focus thoughts and clear
mental confusion. Journaling can also be an outlet for healthy venting.
We facilitate journaling for those new to it, by suggesting an easy
to follow, formatted structure of when to write, how often, what to write
about etc. The journals are for personal use only (unless someone wants to
share a journal entry).

The season of adjustment is the precursor to your new life. You
learn to live with your loss as you reinvest your energy in people, ideas
and new things. You will have begun the process of learning new skills and
tools to help you on.
Reconciliation of grief means coming to the place where you can accept
your life as meaningful, even in light of your loss. When you learn how to
integrate loss into your life, and to affirm that life is till meaningful,
then you have come full circle in your grief journey.
On Sept 15, 2011, I gave a presentation to the Lupus Support Group at Bay Gardens Community Room, Hamilton Ontario on “How to Achieve Life and Health Balance”. As a homeopathic practitioner with a doctorate in natural medicine, my information was not intended to replace the advice of a medical doctor or other health care practitioner.
I offered specific health tips for those with lupus, regarding diet, lifestyle and emotional responses to life challenges. As a grief facilitator, I have seen how important it is to acknowledge the grief that can result from being diagnosed with a serious condition such as lupus. Feelings of loss need to be dealt with or they can lead to further problems with emotional and physical health.
The benefits of healthy food, including the proper ratio of acidic vs. alkaline foods, and proper exercise were explored. I shared an easy, healthy alkaline soup recipe that in my experience as a natural health practitioner I have seen contribute to the alleviation of debilitating symptoms and aid in weight loss for numerous patients.
I discussed the benefits of honest communication and emotional forthrightness, including assertiveness. Embracing the “Four Pillars of Life” was also one of my recommendations:
The audience was given a stress index quiz and a list of websites for useful, up-do-date information regarding the evening’s topic. I am pleased to report that a simple, healthy soup recipe has brought relief to many of my patients and I highly recommend giving this treatment a try. I learned this recipe about 20 years ago when I first did my training with the German homeopaths. The soup has alkaline properties designed to neutralize acid in the body, which is believed to be a culprit in arthritis.

Most recently this soup has brought relief to an 82 year old woman patient. She first consulted with me on March 21, 2011, complaining of arthritic pain in her hips and legs that had worsened over the 2 months prior to her visit. She also had high blood pressure that hovered around 165/89.
Just one week after starting on my prescribed regimen she reported back that most pain was gone from her hips and legs. By continuing to follow the regimen for about 5 months, she found that her blood pressure stablized around an acceptable 113/73. She also managed to lose 10 pounds over that time and felt better overall.
It’s amazing how diet strategies can help alleviate chronic conditions. My 82 year old patient had fewer arthritis symptoms and stabilized her blood pressure by adding my simple, healthy soup formula to her routine. Over the years I have also had other patients report better sleep, pain free periods, clear congestion and more energy when this soup regimen is added to their diet.
Here is the “prescription” that worked wonders for my patients:
Have 2 cups of the following mixture 5 days a week:
Recipe:
8 cups of water
1 cup green string beans
1 cup parsley curly or flat
1 cup zucchini
1 cup celery
Optional: dash of miso paste or lemon
Add all ingredients to water and bring to a boil. Lower temperature and simmer for 45 minutes to an hour.
Soup can be refrigerated up to 1 week
